During the freeze-drying process, the fruits original cell structure is retained and although freeze-dried fruits are small and light-weight, studies show the antioxidant phytochemicals found in the fresh fruits’ are retained at virtually the same level in the freeze-dried fruit.

Fresh organic fruit selection.
The freeze-drying process, also known as lyophilization, is used for removing the water of the fruit to preserve it's original flavour, aroma, and appearance for a long-term storage.
How does it work? Once we have our fresh raw organic fruit selection clean, diced or sliced if needed, the fruit is flash frozen and is then introduced into a refrigerated vacuum chamber where the moisture is removed by applying low heat temperature. During this process the ice is removed by sublimation, this means that the ice turns to vapor and evaporates out of the fruit, basically skipping the liquid phase.
Our freeze-dried fruits can be used as snacks, for frosting and decorating baked goods, and even to toss into smoothies or cereals. Be creative and enjoy this delicious nutritious treat.
